Preparation and Aging:

• Manual harvest in October.
• Cold pre-fermentation maceration for 3 days.
• Controlled alcoholic fermentation and spontaneous malolactic fermentation.
• Aged for 12 months in 300-litre French oak barrels , followed by bottling.
